KHABLIEV VLADISLAV ALIMURZAYEVICH

The owner of the winary

Vladislav Alimurzayevich Khabliev is a businessman working in many areas. He is successful in the realisation of all his goals.

However, the heart and soul of the native from North Ossetia is dedicated to vineculture, love to which he had inherited from their proud ancestors from Caucasus, where the culture of wine is very well developed. As Vladislav personally said, his bleeding-heart still will be production of wine, noble savoury and rare drink.

Thanks to higher technical education, Vladislav Alimurzayevich was able to establish his own production of wine also away from his native country - in Slovakia.

He personally supervises every stage of the technical process, which is constantly improving, but he doesn´t forget about the famous Ossetian traditions of winemaking. A result of the harmonic synthesis is the unique wine, born with the Slovak soul and the Caucasian hot heart.

Harvest white-only-shtopr

  • Very important to create a noble wine is, that the individual bunches have to achieve their opitmal level of maturity. Some grape varieties are processed at the end of summer, and others in late autumn.

We start with grape processing in no more than two hours after its collecting. We use traditional and modern technologies to achieve all the best grapes features for the future wine, that gets to your table.

Fermentation white-only-shtopr-2

  • When we obtain a grape juice, it is a turn of fermentation. During this process, the sugar contained in the grape juice is converted into alcohol.

Earlier, the fermentation was considered almost as sacred act, because exactly at this stage we determine the fundament of taste and strength of the future wine. Masters protected their secret of fermentation, they hand it only to theirs successors of winemaking.

  • We have learned to manage the process of fermentation by creating the ideal conditions for the fermentation of each variety of wine.

Wine “works” in airproof steel containers, where the temperature is well-defined. To maintain its aroma, the excess oxygen is removed from the containers. White and rosé wines are fermented two weeks, red wines from 7 to 14 days.

Maturation white-only-shtopr-3

  • To obtain a rich natural taste and aroma, the wine has to go through the process of maceration. White wines are usually macerated before fermentation, which gives its fragrance oily shades.

Red wine is macerated after fermentation, it helps to saturate its tannins, and gain inimitable ruby color and pleasant bitterness.

  • White and red wines are after fermentation immediately filtered and placed in steel tanks, where ripen for several months to acquire perfectly balanced flavor.

Red wine does not tolerate haste and bustle. It matures in oak barrels one year or more, which gives to the wine bitterness and a touch of vanilla and spices. If a barrel is burned a little more than usual, experts can feel a mild touch of coffee.

Bottling

Our wine is bottled only in glass bottles. White wine is poured into bottles which have the color of emerald, and the red one into the red glass bottles. You can open any bottle of our wine and enjoy the taste. Our Slovak wineries offer to you a wide range of aromas and flavors.

History of winemaking on the land of Slovakia

The famous traditions of slovak winemaking

  • A very important role in this process was a construction of small wineries. Our company also playes the important role in developing of vineculture in the land of Slovakia.

  • The famous traditions of the slovak winemaking are dated in the last milleniums. The first peak of its developement are attributed to the reign of Russian Empire. It were the Benedictine monks, who later started with the cultivation of wine grapes.

  • Another slovak wine renaissance occurred in XVII-XVIII centuries, when the total area of the local vineyards was more than 57 hectares. However during the reign of Habsburgs, there was another significant decrease, when a vine deseases destroyed nearly 80 % of the slovak vineyards.

  • Later, the slovak winery started its development again. In the last century a new grapes varieties resistant against deseases were delivered to the country and the special educational and experimental institutes were organised.
